As a busy work at home mom, I don't have the time to make an elaborate lunch for myself. Sometimes this results in me grabbing some fast food or other equally less healthy options. But in less time than it takes to do that, I can make this flavorful Southwest Chicken Salad Recipe.

This Southwest Chicken Salad Recipe is my favorite to make when I am short on time but still want something delicious and filling. Easy lunch idea! ReadySetChicken AD

This salad could not be easier to put together. You just gather the ingredients and combine them in a large bowl. I love using a large white bowl.

    Easy chicken salad recipe

I used a mix of romaine and iceberg lettuce for this salad for some variety, but you can use whatever you have on hand.

Loving this Southwestern Chicken Salad Recipe!

Tortilla strips make a crunchy addition to the salad and also add some festive color.

I found a zesty chipotle dressing that added a bit of kick to my Southwest Chicken Salad Recipe, but ranch dressing would be yummy as well. For another delicious salad try this Italian Chicken Salad.. This has become my go-to salad and when you see how easy it is to prepare, it might become yours as well!

    FAQs For Southwest Chicken Salad

Can I use store-bought rotisserie chicken?

Yes! Rotisserie chicken works great and makes this recipe even quicker to put together.

What dressing goes best with this salad?

Ranch, chipotle ranch, or a light vinaigrette all pair well with the southwest flavors. You can even add a squeeze of lime for extra brightness.

    How should I store leftovers?

Store any undressed salad in an airtight container in the fridge for up to 2 days. If it's already dressed, try to enjoy it the same day for the best texture.
