    Breakfast is my absolute favorite meal of the day. I could actually eat breakfast food for every meal and be happy. My favorite thing to make for breakfast is a hearty casserole. Casseroles are perfect when you have to feed a crowd and I have even made them for just me and frozen the leftovers. I attend a number of meetings and potluck brunches where I often have to supply a dish and breakfast casseroles are my go-to item.     There are just so many varieties of casseroles that you can make. I especially love the ones that can be made the night before. Talk about a time saver on busy mornings!       Wow, what a great list of breakfast casseroles. We love a big breakfast on Sunday mornings and any one of these would make my family happy!
