How to make easy lemon cookies with cake mix
Preheat oven to 350 degrees. In a large bowl, add the lemon cake mix, oil, and two eggs.
Mix until combined. This recipe is super easy, so it is a great one for kids to help with.
Scoop by rounded tablespoonful onto a parchment covered cookie sheet. You should be able to fit 12 cookies onto a standard sized cookie sheet.
Bake the lemon crinkle cookies with cake mix for 10-12 minutes at 350 degrees. Don't you just love how the tops get all crinkly?
After you remove the 3 ingredient lemon cookies from the oven, let them cool for a few minutes and then move them to a baking rack to cool.
You can enjoy these lemon crinkle cookies with cake mix as is, or you can add a dusting of powdered sugar on top. It just makes them look so pretty!
You can also serve these topped with frosting. We used premade vanilla frosting and it was a delicious addition to these cookies made with cake mix. We couldn't decide the best way to enjoy these, so we left some plain, frosted some, and sprinkled powdered sugar on the others. You can't go wrong either way!

- 1 box lemon cake mix 15.25 oz
- ⅓ cup vegetable oil
- 2 eggs
Instructions
- Line a baking sheet with parchment paper. Preheat the oven to 350 degrees. Pour the lemon cake mix into a large bowl.
- Add in ⅓ cup of oil.
- Add 2 eggs to the bowl.
- Mix until all the ingredients have been thoroughly combined.
- Use a tablespoon to scoop out the cookie dough and place the cookie dough on the cookie sheet a few inches apart.
- Bake for 10-12 minutes. You'll want to remove these before they completely firm up.
- After you remove the cookies from the oven, let them cool for a few minutes and then move them to a baking rack to cool.
