Red Velvet Cookies From Cake Mix
You might be wondering, "Why the big fuss over cake mix cookies, especially red velvet ones?" Well, let me tell you what makes cake mix cookies SO good.
Cake mix cookies bring together the best of both worlds - the charm of homemade cookies and the foolproof simplicity of using a cake mix. If you have only been using cake mix for cake, then you are in for a treat with this recipe.
When you make these cookies with red velvet cake mix, you get that luxurious, slightly cocoa-infused flavor that you have come to love from red velvet cake desserts. Their vibrant color makes them a hit at any gathering. Who can resist a red cookie dusted with powdered sugar?
Ingredients For Red Velvet Cookies
- Red Velvet Cake Mix - The cake mix provides that iconic color and subtle cocoa flavor to the cookies. Using a cake mix is also a great shortcut!
- Whipped topping - The light and creamy whipped topping helps our cookies to bake up fluffy and soft. It also helps to add moisture.
- Egg: - A large egg adds structure and richness to our cookies, helping them to have a chewy texture.
- Powdered Sugar: The dough balls will be rolled in powdered sugar before they are baked. This gives them that pretty crackled appearance and a sweet, melt-in-your-mouth taste.
How to Make This Easy Red Velvet Cookie Recipe
Making these red velvet cookies is as easy as pie—or should I say, cookies! To start, you'll be placing all the ingredients in a large bowl where the magic really starts to happen. As you are mixing them all, the flavors will combine and start melding together!
When the cookie batter is all mixed, it turns this gorgeous red color!
You'll be using a handy dandy cookie scoop to get uniformly sized cookies. Each of the cookie dough balls will get dropped into a fluffy cloud of confectioner's sugar where it will roll around until fully covered.
Then they go on a parchment covered baking sheet (I'm always thinking of easy cleanup!) and head to the oven. You can also use a silicone baking mat on a cookie sheet.
You will need to let them cool for a few minutes when they come out of the oven, but it will be tough to resist taking a bite out of them!
Tips for Making Red Velvet Crinkle Cookies
Tip 1: When you are mixing the ingredients together you want to be careful not to overmix them. Mix until just combined. Over-mixing can cause the cookies to have a tougher texture.
Tip 2: It can be tempting to eat these as soon as they come out of the oven. But be sure to give a couple of minutes to cool on the baking sheet before moving them to a wire rack. This lets them set so they don’t fall apart.
Tip 3: Feel free to add your own twist to these red velvet box cake cookies. Try adding white chocolate chips or a sprinkle of sea salt before baking for some extra yum!
Do I Need to Use a Cookie Scoop?
If you are an avid baker then you have probably heard of a cookie scoop. This tool has become increasingly popular and can be a big help when making cookies. But do you really need to use a cookie scoop?
A cookie scoop is basically a small, handheld scooper similar to an ice cream scooper, that is used to portion out the dough when baking. Cookie scoops are made in various sizes depending on the kind of cookies you want to make.
But it is not a problem if you don't have a cookie scoop. You can use a regular spoon to scoop your dough, then roll it into balls with your hands. Try to eyeball them to be roughly the same size. They might not be perfect, but the imperfections add character!
How Do You Store Cake Mix Cookies?
Before you store the cookies, you want to be sure that they have cooled completely. Once they are at room temperature, you can transfer them to an airtight container. The red velvet cake cookies should stay fresh for up to a week at room temperature. You can also freeze cake mix cookies in a zip top bag for up to 3 months.
You can even freeze the uncooked dough for later use. Simply portion the dough, roll it into balls and in the powdered sugar, and freeze them on a baking sheet. Once they're solid, you can transfer them to a freezer bag. The frozen cookie dough will keep for a couple of months. When you are ready to bake, just let them thaw, and bake according to recipe directions.
