    🥣Ingredient Notes

    • Chicken breast - use boneless, skinless, fresh or defrosted chicken.
    • Spinach - I used baby spinach for this recipe, but you could regular spinach as well.
    • Sun-dried tomatoes - Use ones that have been packed in oil and drained. I like to leave them whole, but you can chop them if you wish.
    • Heavy cream - The mixture of the cream, milk, and cheese makes this sauce creamy and cheesy.


    📋Step by Step Instructions

    STEP 1: Cut fresh or defrosted chicken breast into 1-inch bite-size pieces.

    STEP 2: Add the olive oil and chicken to a cast iron skillet, then season with salt, pepper, and garlic.

    STEP 3: Cook the chicken over medium-high heat until cooked through, about 10 minutes.

    STEP 4: While the chicken is cooking, make your pasta. Fill a large pot halfway with water, bring to a boil, add the noodles, and cook over high heat for 8 minutes or until al dente. Then drain the water.

    STEP 5: Remove cooked chicken from the skillet, and set aside.

    STEP 6: Melt the butter in the skillet, then add sun-dried tomatoes and spinach. Sautee over medium heat until the spinach has started to wilt.

    STEP 7: Add the cream and milk, and cook until it comes to a simmer.

    STEP 8: Remove from heat and stir in the Italian seasoning, and Parmesan cheese.

    STEP 9: Return the chicken and pasta back to the skillet and stir.

    Tip 1: I used whole milk, but 2% or skim milk will work as well since this recipe also uses cream.

    Tip 2: In a rush? Use precooked or rotisserie chicken in this recipe instead of cooking your own chicken breast. No one will be able to tell the difference.

    • 2 tablespoon olive oil
    • 2 tablespoon unsalted butter
    • 2 lb boneless skinless chicken breast
    • ½ teaspoon Salt
    • ½ teaspoon coarsely ground black pepper
    • 1 tablespoon Italian seasoning
    • 1 teaspoon garlic powder
    • 2 cups baby spinach
    • 8 oz sun-dried tomatoes in oil drained
    • 2 cups heavy cream
    • 1 cup milk
    • ⅔ cup grated Parmesan cheese
    • 8 oz penne pasta

    Instructions
     

    • Cut the chicken into 1 inch cubes.
    • Add the olive oil and chicken to a cast iron skillet, then season with the salt, pepper, and garlic.
    • Cook the chicken over medium heat until cooked through, about 10 minutes.
    • While the chicken is cooking, make your pasta noodles.
    • Fill a large pot halfway with water, bring to a boil, add the noodles, and cook over high heat for 8 minutes. Then drain the water.
    • Remove cooked chicken from the skillet, set aside.
    • Saute the butter, sun-dried tomatoes and spinach over medium heat until the spinach has started to wilt.
    • Add the cream and milk, and cook until it comes to a simmer.
    • Remove from heat and stir in the Italian seasoning, and Parmesan cheese.
    • Add the chicken and pasta, stir, and serve.
