What is sundried tomato pesto?
Sundried tomato pesto gives a unique twist on traditional pesto. It is made with sundried tomatoes, olive oil, parmesan cheese, garlic and nuts. You can use it as a topping for pasta, chicken or fish.
How to make this sun dried tomato pasta recipe
You'll start by cutting the pancetta into squares.
Add the pancetta to a large skillet.
Cook over medium-high heat until the pancetta is browned and resembles bacon. There is no need to add oil because the pancetta will cook in its own fats.
Add the pesto sauce with sundried tomatoes. Stir well. This will infuse the sauce with a smoky taste.
Boil pasta on stove as directed on the box and drain the pasta water. I used penne pasta, but spaghetti, bowties, and most other pastas will work as well.
Toss the pasta with the pesto and pancetta mixture and scoop out into bowls. If you wish, garnish with grated Parmesan cheese, basil leaves or red pepper flakes if you like a little spice.
