- ½ cup carrots chopped
- ½ cup corn drained (fresh or frozen)
- 14.5 oz diced tomatoes canned
- 64 oz beef broth two 32-ounce containers
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups uncooked noodles I used rotini; egg noodles also work
Instructions
- In a large soup pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat if needed.
- Add garlic, onion, celery, and carrots to the pot. Cook for 5–6 minutes, stirring occasionally, until softened.
- Stir in corn, diced tomatoes (with their juices), beef broth, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 15–20 minutes to let the flavors blend.
