Lately, we have been having more and more busy afternoons and evenings. My husband got a promotion at work, which is fabulous news, but it has resulted in a heavier workload and longer hours for him. Couple that with my kids being a children’s theater musical production, taking piano lessons and practicing for a school variety show, and you can see how our family time has lessened. We have had to eat on-the-go more or eat separately. This has been hard for me, as one of the things I have always tried to do as a parent is to connect over meals. Recently on a weekend, I decided it was time to sit down all together and catch up and connect with a home-cooked meal. I made a hamburger tater tot casserole since I knew it was something easy and delicious that the whole family would love. It is also one of the best ground beef recipes I know! This ground beef tater tot casserole takes less than hour from start to finish, so it is perfect for those busy nights when you want to get a warm meal on the table for your family. It does have onions (which I love) in the recipe. The only problem with that, is onions don’t exactly agree with me and have been known to give me heartburn. If you love to eat as much as I do, then heartburn can be quite the downer. If you haven’t suffered from heartburn yet, be grateful. Heartburn occurs when acid escapes from your stomach up into your esophagus. The esophagus was not meant to house acid, which causes the burning sensation. Okay, now that you know how I treat my heartburn, lets get to the casserole!
Hamburger Tater Tot Casserole
To start with, you’ll be browning some ground beef and adding onions. Then add cream of chicken soup, Worcestershire sauce, BBQ sauce and combine. Place the mixture in a 9 x 13 casserole dish and top with shredded cheddar and yummy crumbled bacon. My husband has a shirt that says “That’s too much bacon…said no one ever” so you know we love our bacon.
Top with tater tot potatoes and bake for 30 minutes.
The result is a cheesy, meaty meal that is the comfort food at its best. It is a wonderful meal to make when you want to sit down and connect with the people who are most important to you. Hamburger Tater Tot Casserole
This Hamburger Tater Tot Casserole is comfort food at its best. Less than an hour from start to finish. My family loves this casserole recipe!
- 1 pound ground beef
- 1 small onion chopped
- 1 can of cream of chicken soup
- 1 tablespoon BBQ sauce
- 1 tablespoon Worcestershire sauce
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon pieces
- 21 oz Frozen tater tot potatoes
Preheat oven to 425 degrees.
In a large skillet, cook crumbled ground beef and onion until browned.
Discard excess fat.
Add cream of chicken soup, Worcestershire sauce and BBQ sauce into pan. Stir until well combined under low heat.
Pour mixture into a 9x13 casserole dish.
Top with the tater tot potatoes.
Bake at 425 degrees for 30 minutes, checking on the potatoes near the end of cooking time to make sure they don't burn.
