    • Canned chicken: I use the Kirkland brand from Costco because it’s super convenient and shreds easily right out of the can. Just be sure to drain it well so your nuggets hold together.
    • Monterey Jack cheese: This melts beautifully and adds a great flavor. Mozzarella or even a cheddar blend works too.
    • Egg: You'll only need one to bind everything together!
    • Seasonings: I kept it simple with salt, pepper, and garlic powder.
    • Parsley: Optional, but I like the pop of color. Fresh always looks pretty, but dried works in a pinch!

    How to Make Keto Chicken Nuggets

    1. Preheat & Prep: Preheat oven to 400°F and line a baking sheet with parchment paper so nothing sticks.

    2. Mix It All Up: In a large bowl, stir together the drained chicken pieces, egg, cheese, and spices.

      3. Scoop & Shape: Use a cookie scoop (or just a spoon) to portion out the mixture. Plop them on the baking sheet and gently flatten the tops with your fingers.

      4. Bake Round One: Slide the tray into the oven and bake for about 5-6 minutes. You’ll start to see golden edges.

        5. Flip & Finish: Carefully flip each nugget and bake for another 5-6 minutes. You want both sides golden and slightly crispy.

          • 10 oz canned chicken well-drained
          • 1 large egg
          • ½ cup shredded Monterey Jack cheese
          • ½ teaspoon salt
