You'll want to cook the frozen riced cauliflower so that it doesn't add extra liquid to the casserole. Simply cook it according the directions on the package and add it in the casserole.

WHAT KIND OF CHICKEN DO YOU USE FOR THIS RECIPE?

I used chicken breast for this chicken recipes like this one, but boneless chicken thighs would work as well. Simply cook them and cut them into cubes. Shredded chicken would work as well.

Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.

Microwave the riced cauliflower according to package directions. Pour into a large bowl and add cut broccoli florets.

I made this and since some mentioned it was a little dry, I used some chicken boullion in a cup with hot water and added I'd say about 1/2c. I used the packaged chicken (rinsed) and a little bit of frozen perdue rotissere chicken that I had leftover. I used bag riced cauliflower, microwaved about 4 minutes, same with bag of broccoli. I mixed all that in a 13x9 pan with 4oz cream cheese just hand ripped and blopped around. I mixed in shredded cheeses, what I had on hand was fiesta blend and colby jack, then for the bonus..... I mixed in a pack of ranch seasoning. When I mixed all of that in, I sprinkled some mozarella on top, and leftover (real) bacon bits.

      Easy and YUM.

Ingredients list is incomplete (eggs mentioned in instructions, but not in ingredients) and it needed a bit of liquid to help bind the ingredients, like broth or milk/cream. Real garlic & onions would make it better. Still a good recipe!

Made as directed but used real onion and garlic. Was super yummy but next time I'll add some chicken broth or heavy cream and some chopped bacon. Just a tad dry.

Can we use frozen broccoli? And would I go ahead and microwave it before adding it to the casserole?
