INGREDIENTS YOU NEED FOR KETO CHEESY CHICKEN CASSEROLE
- Chicken breast
- Riced cauliflower
- Onion powder
- Garlic powder
- Cream cheese
- Shredded cheddar cheese
- Salt and pepper
HOW TO MAKE BROCCOLI AND CAULIFLOWER RICE CASSEROLE
This keto casserole recipe uses riced cauliflower. Now you can go through the trouble of making your own riced cauliflower. But mama, I know you don't have time for that. So I have a great supermarket shortcut for you that involves frozen riced cauliflower which can be found in most grocery stores in the freezer section.
HOW DO I MAKE MY OWN CAULIFLOWER RICE?

DO I NEED TO COOK THE FROZEN RICED CAULIFLOWER BEFORE ADDING IT TO THE CASSEROLE?
You'll want to cook the frozen riced cauliflower so that it doesn't add extra liquid to the casserole. Simply cook it according the directions on the package and add it in the casserole.
WHAT KIND OF CHICKEN DO YOU USE FOR THIS RECIPE?
I used chicken breast for this recipe, but boneless chicken thighs would work as well. Simply cook them and cut them into cubes.
Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.
Microwave the riced cauliflower according to package directions. Pour into a large bowl and add cut broccoli florets.
DO I NEED TO COOK THE BROCCOLI BEFORE USING IT IN THIS CASSEROLE?
You do not need to cook the broccoli. When the casserole is done, the broccoli will be slightly al dente with a little bit of a bite to it.
Add cut up pieces of softened cream cheese, garlic and onion powders, and 2 eggs to bowl.
Add 1 cup of shredded cheese and cooked chicken to bowl. Add salt and pepper to taste. Mix well to combine all the ingredients.
Transfer mixture to a greased 8x8 casserole dish. Top with ½ cup shredded cheddar.
Bake this Keto Chicken Broccoli Casserole with Cauliflower for 40 minutes at 350 degrees.
When my husband saw this come out of the oven he thought it was a cheesy broccoli and rice casserole I often make. He was pleased to find out that I made it with cauliflower rice instead.
HOW LONG CAN YOU REFRIGERATE THIS CHICKEN CASSEROLE?
You can refrigerate the leftovers for 3-4 days.
