    I know so many people that are currently following a low carb or keto diet and having great success with it. Obviously, having access to easy keto recipes, is a key to weight loss success. But let's face it, the keto diet can be somewhat repetitive. I'm always looking for ways to switch it up and create you dishes that will be enjoyed by those following a low-carb lifestyle and those who aren't. With that in mind, I'm super excited to share this Keto Chicken and Broccoli Casserole. This is a cheesy dish that uses riced cauliflower in place of rice. You'll love it!     HOW TO MAKE BROCCOLI AND CAULIFLOWER RICE CASSEROLE

    This keto casserole recipe uses riced cauliflower. Now you can go through the trouble of making your own riced cauliflower. But mama, I know you don't have time for that. So I have a great supermarket shortcut for you that involves frozen cauliflower rice which can be found in most grocery stores in the freezer vegetables section.

    DO I NEED TO COOK THE FROZEN RICED CAULIFLOWER BEFORE ADDING IT TO THE CASSEROLE?

    You'll want to cook the frozen riced cauliflower so that it doesn't add extra liquid to the casserole. Simply cook it according the directions on the package and add it in the casserole.

    WHAT KIND OF CHICKEN DO YOU USE FOR THIS RECIPE?

    I used chicken breast for this recipe, but boneless chicken thighs would work as well. Simply cook them and cut them into cubes. Shredded chicken would work as well.

    Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.

    Microwave the riced cauliflower according to package directions. Pour into a large bowl and add cut broccoli florets.

    Add cut up pieces of softened cream cheese, garlic and onion powders, and 2 eggs to a large mixing bowl.

    Add 1 cup of shredded cheese and cooked chicken to bowl. Add salt and pepper to taste. Stir well to combine all the ingredients.

    Transfer mixture to a greased 8x8 casserole dish. Top with ½ cup shredded cheddar. Now the low carb chicken broccoli casserole is ready to go in the oven.

    Bake this broccoli cauliflower casserole for 40 minutes at 350 degrees.

    When my husband saw this come out of the oven he thought it was a cheesy broccoli and rice casserole I often make. He was pleased to find out that I made it with cauliflower rice instead. Chicken broccoli cauliflower rice casserole was a hit!

    Ingredients

    • 12 oz chopped and cooked chicken breasts
    • 12 oz frozen riced cauliflower

    • 1 teaspoon garlic powder
    • 1 tsp onion powder

    • 1.5 cups shredded cheddar cheese
    • ⅛ teaspoon pepper
    • ¼ teaspoon salt

    • Preheat oven to 350 degrees. Cook your chicken in a pan and cut into cubes.

      How many eggs? Your instructions call for eggs, but no eggs are listed in the ingredients.
