How to make a cookie sandwich
Let's make some of these yummy cookie sandwiches, shall we? First things, first: preheat your oven to 350°.
In a large mixing bowl combine ¼ cup of brown sugar, ½ cup of sugar and 1 stick (½ cup) of room temperature butter.
Crack 1 egg, add vanilla and sprinkle in ½ teaspoon of baking soda.
Slowly add 1 ½ cups of all purpose flour and then stir in ¼ cup of chocolate chips and ¼ cup of M&M’s.
This is my kids' favorite part, though it may be because they like to sample the candy!
Make the cookie dough into tablespoon sized balls and place on a nonstick pan or a parchment paper lined pan. Use a spoon to slightly flatten.
Bake the cookies for 10-12 minutes, then remove them from the oven. Place the cookies on a cooling rack.
Once the cookies have cooled, spread frosting (I think chocolate would just put this over the top!) on the inside of every other cookie.
Place a cookie on top to make a cookie sandwich. Use the remaining ¼ cup of M&Ms to place around the edges. They just make these cookies look so festive!
These cookies look super fun and are absolutely delicious! They are sure to be a hit with the whole family!
Feeling adventurous? Try replacing the frosting with vanilla ice cream to make ice cream cookie sandwiches. Yes, please!

I have long been a proponent of cooking with kids. There are so many things kids learn helping out in the kitchen. Math, reading, chemistry, cooperation and more are used while following a recipe.
