Confetti Cookies Recipe
Ingredients
- 1 cup vegetable oil
- ¾ cup granulated sugar
- ½ cup brown sugar
- 2½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 1 ½ teaspoons vanilla
- 2 eggs
- 1 cup sprinkles
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix oil and white and brown sugar.
- Add eggs and vanilla to bowl with oil and sugar. Mix.
- Slowly add flour, baking soda and baking powder to bowl with wet ingredients. Mix until dough forms.
- Gently fold in sprinkles and mix until they are evenly distributed.
- Line a baking sheet with parchment paper. Drop rounded tablespoons of dough two inches apart on baking pan.
- Bake for 8-10 minutes at 350 degrees.
- Remove from oven and let the cookies cool for a few minutes on baking sheet before transferring them to a wire rack to finish cooling.
