    • Eggs - Large eggs at room temperature work best.
    • Sprinkles - Give the cookies their fun color and a bit of crunch.

    How to Make Confetti Cookies

    To make these cookies you will want to start by combining the oil and sugars in a large bowl. Beat in the vanilla extract, then add your eggs one at a time. You'll want to give the a good mix after adding each additional ingredient. Then it's time to add all the dry ingredients into the bowl with the wet ones. So gradually pour in the flour, baking soda, baking powder, and a pinch of salt.

    • 1 cup vegetable oil
    • ¾ cup granulated sugar
    • ½ cup brown sugar
    • 2½ cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • Pinch of salt
    • 1 ½ teaspoons vanilla
    • 2 eggs
    • 1 cup sprinkles

    Instructions
     

    • Preheat oven to 350°F.
    • In a large bowl, mix oil and white and brown sugar.
    • Add eggs and vanilla to bowl with oil and sugar. Mix.
    • Slowly add flour, baking soda and baking powder to bowl with wet ingredients. Mix until dough forms.
    • Gently fold in sprinkles and mix until they are evenly distributed.
    • Line a baking sheet with parchment paper. Drop rounded tablespoons of dough two inches apart on baking pan.
    • Bake for 8-10 minutes at 350 degrees.
    • Remove from oven and let the cookies cool for a few minutes on baking sheet before transferring them to a wire rack to finish cooling.
