    Do you remember Bomb Pops from when you were a kid? If you are like me, you look at them with a touch of nostalgia. The red, white and blue colors always made me feel patriotic. These Bomb Pop Patriotic Cupcakes are inspired by those summer treats and are perfect for any patriotic holiday such as Memorial Day or the 4th of July.     Bomb Pop Patriotic Cupcakes

    Bomb Pop Patriotic Cupcakes

    For 18 cupcakes you will need:

    • white cake mix
    • eggs room temperature
    • unsalted sweet cream butter
    • milk
    • vanilla extract
    • Red and blue gel food coloring
    • White cupcake liners
    • Muffin pan

    Preheat oven to 350. Line muffin pan with the white cupcake liners. In a medium bowl, add the cake mix, butter, milk, and vanilla extract and stir until thoroughly combined.

    Divide the batter into 3 bowls and leave one bowl white. Add blue food coloring to another bowl to create a deep blue, and stir well. Add red food coloring to the third bowl to create a deep red and stir well to combine.

    Scoop about 1 tablespoon of each colored batter into the cupcake and continue to rotate colors until it is ¾ of the way full.

    Bake in the oven for 18-20 minutes. Remove from oven and let cupcakes cool completely before frosting.

    For the frosting you will need:

    • 1 cups unsalted sweet cream butter, softened
    • 3 cups powder sugar
    • 1 teaspoon vanilla
    • 3-5 tablespoon heavy whipping cream
    • Red and blue gel food coloring
    • 3 disposable piping bags with a star tip
    • Patriotic cake sprinkles

    Using a stand mixer, combine all ingredients and mix on medium speed until you see stiff peaks in your frosting.
    Once the frosting is made, split it into three bowls putting a little more in the bowl that will have the red frosting. Add about 2-4 drops of each color of food coloring: red in one bowl, blue in another leaving the third one white.

    Place one piping bag into a large glass and fold the sides of the bag over. Scoop the red frosting into the piping bag. Squeeze a red layer of frosting onto all the cupcakes.

    Scoop the white frosting into a piping bag. Squeeze a white layer of frosting onto all the cupcakes on top of the red frosting. Make the white layer a little smaller than the red.

    Scoop the blue frosting into a piping bag. Squeeze a blue layer of frosting onto all the cupcakes on top of the red and white frosting. Make the blue layer a little smaller than the white layer.

      I'm not sure Bomb Pop cakes ever made it across the pond to the UK but these are spectacular, and the red. white and blue is just as patriotic here in England - perfect! Perfect for the Anglo-American Royal Wedding celebrations this weekend!
