Oatmeal Cookies With Oatmeal Packets
You might think instant oatmeal packets are just for breakfast, but did you know you can make delicious chewy cookies using those packets? That's right. You can get all the nutritional benefits of oats, such as being high in fiber and supporting heart health while enjoying a delicious cookie.
Using oatmeal packets for this recipe simplifies the baking process and makes it easy to switch up the flavor profile of these cookies. It also lets you be creative, as changing the oatmeal packet flavor can easily add fruit flavor or spices.

Ingredients For Instant Oatmeal Cookies
- Butter - You will be using softened butter for easy mixing.
- Granulated sugar - This adds sweetness to the dough. Since the instant oatmeal is sweetened, you will use less sugar than in a normal cookie recipe.
- Milk - Adds moisture to the cookie dough.
- Egg - A large egg at room temperature works best.
- Cinnamon - The instant oatmeal has cinnamon, but this adds a little extra flavor.
- Vanilla extract - Enhances the overall flavor of the cookies.
- Baking powder - To help the cookies rise.
- Baking soda - This helps the cookies to be soft and airy.
- Maple and Brown Sugar instant oatmeal - Oatmeal will add texture to the cookies. You can use other varieties as well.
- Flour - Provides structure to the cookie dough.
- Chocolate chips - Adds sweetness and chocolate flavor.
- Chopped walnuts - Add a nutty flavor to the cookies. You can also use chopped pecans or skip nuts entirely.

How to Make Oatmeal Cookies With Instant Oatmeal?
Ready to bake some cookies? Grab a large bowl - I just love these bowls from Amazon - and beat the butter and sugars together. This is tough to do by hand, so I used a hand mixer like this one to make the job easier. Then, just mix in your other wet ingredients - the milk, egg, and vanilla.

Now grab another large bowl for the dry ingredients. Here, you'll mix the flour with the cinnamon, baking powder, baking soda, and instant oatmeal packets. Then, just mix the dry ingredients into the bowl with the wet ingredients, and you have cookie dough!

While you could stop there and have perfectly good cookies, I am a little extra so I like to add some yummy chocolate chips and chopped walnuts. Fold those into the dough, careful not to overmix.

I love using a cookie scoop like this one when I bake cookies. They help me make uniform cookies. I'll let you in on a little secret. I typically use this parchment paper to line my baking sheets. I had run out of it when I made this recipe, so I figured I would just spray cooking spray on the cookie sheet.

It did not seem to affect the cookies at all, as they looked so pretty when I took them out of the oven. Well, looks can be deceiving. These cookies were stuck on the baking sheet. It took a lot of elbow grease to get them off in one piece. So please use parchment paper when you make cookies.

Tips for Making Cookies With Instant Oats
Tip 1: Having butter and eggs at room temperature makes a big difference in the texture of your cookies. Room-temperature butter and eggs help cookies to be softer and chewier.
Tip 2: One of the most common mistakes people make when making cookies is overmixing the dough. Be gentle hand when folding in ingredients like chocolate chips and walnuts. Overmixing can create tough cookies.
Tip 3: Let the cookies cool for a few minutes on a baking sheet before moving them to a wire rack. This will allow them to set and not break when moved.

Can I Use Plain Oats Instead Of Flavored Instant Oatmeal?
Maybe you want to make this recipe, but you don't have instant oats on hand. No problem! While you can always purchase instant oats on Amazon, you can use plain oats if you wish. Since instant oats have some other sugar and flavoring mixed in, you'll want to add extra sweeteners like sugar or honey and spices like cinnamon or nutmeg for flavor.
FAQ For Instant Oatmeal Cookies Recipe
Do I Have To Add Nuts To Instant Oatmeal Cookies?
But what if you don't are not a nut person or don't have any nuts on hand? Can you still make this recipe? Good news! You can still enjoy delicious oatmeal cookies without nuts. Feel free to leave them out if they don't work for you for whatever reason.
How Do You Store Easy Oatmeal Cookies?
Separate the layers with parchment paper to prevent sticking. The cookies will remain fresh when stored at room temperature for about a week.
You can also freeze these cookies for longer storage time. Simply place them in a zip-top bag between layers of parchment paper and store them in the freezer for up to three months.
Can I Use Dark Chocolate Chips Instead Of Semi-sweet?
The beauty of this recipe is its versatility. Dark chocolate chips (or even milk chocolate chips) can make a delicious substitute for semi-sweet in any recipe, and these instant oatmeal cookies are no exception. Dark chocolate has a richer, more intense flavor and can add a depth of flavor to this recipe.
Since dark chocolate is less sweet than semi-sweet chocolate, you may want to adjust the amount of sugar in your recipe if you switch up the chips. Feel free to experiment with different types of chips depending on your taste. I love making these oatmeal cookies with these white chocolate chips sometimes for a unique twist.

This was the first time I've ever succeeded in making cookies. I was almost hesitant since I would overmix my dough or the cookies would come out bread-like. However, these were perfect! They were the right amount of crunch, softness, and sweetness. I used strawberries and cream oatmeal packets and 1 maple brown sugar. I also crushed some sliced almonds too, since I didn't have walnuts or chocolate chips. Was amazing, even my mom loved them. I think I'll add coconut and crushed cornflakes next time to get that McDonalds Oatmeal cookie taste. Thank you so much! ♡
