    Taco soup is one of my favorite soups to prepare, especially on a chilly evening. Ground beef makes it filling while the peppers give it a ton of Southwestern flavor. What makes this taco soup even better is the fact that it can be cooked in the Instant Pot. So in less than 30 minutes, you can be enjoying a hearty soup that will warm your belly.     It’s taco soup – made fast! Creamy, spicy, hearty – it’s exactly what you’re going to want on a cold day. This Instant Pot Taco Soup is a delicious quick and easy weeknight dinner recipe.

    Ingredients

    • ground beef
    • garlic
    • diced tomatoes
    • anaheim pepper
    • jalapeno
    • paprika
    • cayenne pepper
    • chili powder

    • frozen corn
    • white onion
    • salt
    • black beans
    • chili beans or kidney beans
    • vegetable broth (can also use chicken broth) - click to see what I use

    • cheddar cheese (optional)

    How to make Instant Pot taco soup

    Place the ground beef and minced garlic in the Instant Pot. Make sure you thaw your ground beef ahead of time. Cook on saute for 5 minutes. Toss in onions and cook for 2 more minutes.

    Now add all the taco seasoning spices to the pot and stir.

    Add in tomatoes, Anaheim peppers, jalapeno, and corn. Top this mixture with strained chili beans and black beans and stir well.

    Add broth and water to the Instant Pot. Place the lid on pot and set to sealing position. Set timer to high pressure for 8 minutes.

    Once the pot stops counting, release the pressure valve knob.

    Ingredients

    • 1 lb ground beef
    • 1 tablespoon minced garlic
    • 2 tomatoes, sliced
    • 1 Anaheim pepper, diced
    • 1 jalapeno, diced
    • 1 tablespoon paprika
    • 1 teaspoon cayenne pepper
    • 1 teaspoon chili powder
    • 1 tablespoon cumin
    • 1 cup frozen corn
    • 1 white onion, diced
    • 2 teaspoons salt
    • 1 can black beans, strained
    • 1 can pinto beans, strained
    • 2 cups vegetable broth
    • 2 cups water

    Instructions

    • In a instant pot, place ground beef and minced garlic. Cook on saute for 5 minutes. Toss in onions and cook for 2 more minutes.
