They say confession is good for the soul. Well, I have a confession to make. I am obsessed with crescent roll recipes. There I said it. Feels good to get that out there. What makes me adore these flaky, buttery things so much? Well for one, they are versatile. You can make just about anything out of them. We have made Peach Pie Crescents, Crescent Roll S'mores and Turkey and Cheese Stuffed Crescents just to name a few. Today, the kids helped me make some Apple Pie Muffins. But these are no ordinary Apple Pie Muffins, they are made using crescent rolls of course. I love cooking with kids because its a way to spend quality time together and teach them a few things in the process. Apple Pie Muffins
This recipe will make 4 Apple Pie Muffins. Since you need 2 crescents per muffin, you will get 4 muffins out of a tube of 8 crescents.
Preheat oven to 375 degrees.
Remove the dough from the tube and unroll it. The dough is made of crescent triangles. Connect two of the triangles so that you can make four rectangles of dough.

Push each rectangle of dough into a greased muffin tin so that they form a muffin cup.

If you have a little helper, this is a great time to get them involved. They can scoop a large spoonful of apple pie mixture into each crescent muffin cup.

Now it's time to make the streusel topping for the apple pie muffins. The following mixture makes ¾ cup of streusel topping and you may have some leftover depending on how much you put on each muffin.
Combine - ⅓ cup of sugar, ⅓ cup of flour, ⅔ teaspoon of cinnamon, ½ tablespoon of water and 2 tablespoons of softened butter. Use a fork to mix the butter into the mixture until it becomes crumbly.
Now you sprinkle some over the apple pie filling in each muffin. My daughter sprinkled a few large spoonfuls onto each muffin.


Bake the muffins in a 375 degree oven for 12-13 minutes until the edges start to brown. We used a smaller muffin pan and baked ours in our toaster oven which worked perfectly.

These are best served warm, but let them cool a little as the apple pie filling can be quite hot especially for kids.

These apple pie muffins are great if you have an unexpected guest. They work for breakfast or dessert and are so delicious, you won't believe they are this simple to make.

I needed to bring several things for a dessert reception and I didn't want to go to the store. I ended up making these in my mini muffin pan (24 cup) and they turned out fabulous. I did sprinkle cinnamon sugar on the crescent rolls once in the pan, just to sweeten them up a touch. Thanks for the great idea.
