    Creamy Gnocchi with Tomatoes

    To make this delicious Italian dish, start by cooking the potato gnocchi in a large pot according to package directions. You'll want to set aside a few teaspoons of the water the gnocchi was cooked in.

    Cut the grape tomatoes in half.

    Heat the olive oil in a large skillet over medium-high heat and add sliced garlic to the pan. Cook until the garlic is soft.

    Add the cut tomatoes to the pan. Cook the tomatoes and garlic together for a minute, stirring often.

    Add gnocchi, cream cheese, salt and pepper to the pan. Stir and cook the mixture until melted. Remember that gnocchi water you set aside before? Add a teaspoon of it to the pan and stir.

    Tear the fresh basil and add it to the pan with the grated Parmesan cheese.

    Stir to combine everything together. If the mixture has become too thick, feel free to add more gnocchi water to thin it out.

    • 1 lb gnocchi
    • 1 pint grape tomatoes
    • 4 oz block cream cheese ½ block
    • 3 garlic cloves
    • Handful basil
    • ¼ cup Grated parmesan
    • ½ teaspoon salt
    • 1 teaspoon ground black pepper
    • 1 teaspoon olive oil

    Instructions
     

    • Cook gnocchi according to package directions. Set aside a few teaspoons of the water the gnocchi was cooked in.
    • Meanwhile, heat olive oil in a pan over medium heat.
    • Slice garlic and add to pan. Cook until soft.
