    Since my husband has started a Keto diet, I have been using keto recipes to make him some yummy treats. These Keto Peanut Butter Cookies are one of his favorites. They are simple to make, gluten-free and so good, even my kids like them. You'll also love these Keto Cookie Recipes for Christmas.

    These Keto Peanut Butter Cookies are a great once in a while treat to keep you on program while satisfying a cookie craving.

    Why these peanut butter keto cookies are awesome

    I bake a lot of cookies, but these are unique. For one, since they are keto cookies, they are not made with any flour. But don't worry, you won't miss it! If you love rich peanut butter flavor, then you will flip for these keto peanut butter cookies. They work great for snacks or desserts.

    Ingredients

    • sugar-free peanut butter
    • cream cheese - give the cookies a smooth texture
    • eggs
    • vanilla extract
    • liquid Stevia

    To give these low carb cookies a hint of sweetness, you can use liquid stevia sugar replacement.

    How to make low-carb peanut butter cookies

    To make these 5 ingredient keto peanut butter cookies, you will mix the liquid stevia with peanut butter, cream cheese, eggs and vanilla extract in a large mixing bowl. The cookie dough will be somewhat sticky. A good tip I have found is to use a little coconut oil on your hands while forming the cookie balls. This will help keep the dough from sticking to your hands.

    I like to use a parchment paper lined baking sheet when I bake, since it makes clean up so easy and you don't have to worry about food sticking. You can also use a silicone baking mat on a cookie sheet.

    Roll and place 1 inch sized cookie balls onto the parchment lined baking sheet.  You can also use a 1 inch cookie scoop to shape the dough.

    Use a fork to flatten the cookie balls with a crisscross design that is popular on peanut butter cookies. Since these keto peanut butter cookies will not expand when cooked, there is no need to leave a lot of space between the cookies.

    When the cookies are done baking, remove them from the oven and place them on a cooling rack to cool. You'll want to eat them right away, but wait for them to cool before you have a taste.

    This peanut butter cookie recipe makes a wonderful snack or occasional treat. Their deliciousness will remind you of old fashioned peanut butter cookies you enjoyed as a kid, but they are a whole lot better for you since they are make with sweetener instead of sugar.

    Ingredients
      

    • 2 cups sugar-free peanut butter
    • 1 cup cream cheese room temp
    • 2 eggs
    • 2 teaspoon vanilla extract
    • 4 tablespoon liquid Stevia

    Instructions
     

    • Preheat oven to 350 degrees.
    • Combine all ingredients until incorporated well.
    • Line a baking sheet with parchment paper. Then roll and place 1 inch cookie balls on the parchment paper.
    • Using a fork, flatten the cookie balls with the classic peanut butter cookie crisscross design.
    • Bake for 10 minutes, or until outside is golden brown.
    • Let cool and enjoy!

      These cookies taste horrible and don’t harden. Terrible after taste I think too much liquid stevia.

      I am an avid baker and I followed these cookies to a t and they were DISGUSTING!!! They were oily and tasted like garbage juice.. thumbs down!

      These cookies were absolutely disgusting. I had to throw them out, they were greasy, oily and tasted terrible. Even tried baking longer- no luck. Don't waste your time or money buying expensive ingredients to make these.

          Yea I just followed recipe and they were not good. Had to throw out. Too much stevia.

        Wish I read this before making. Too much stevia. Would recommend using teaspoons instead or erythritol

          I am making these now. Cut the recipe in half . And only used 2 teaspoons of liquid stevia. 😉
