How to Make Pumpkin Cake Mix Cookies
Preheat the oven to 350 degrees F. Pour the box of spice cake mix into a large bowl and add the pumpkin pie spice. If you don't have pumpkin pie spice, you can make your own by following the recipe in the tips below.
Next, add the can of pumpkin puree to the bowl.
Stir to combine until all the cake mix has been blended.
Now it's time to add the chocolate chips. I used milk chocolate chips, but semi-sweet would work as well.
Stir to incorporate the chocolate chips into the cookie dough.
Line a cookie sheet or baking sheet with parchment paper or use a silicone baking mat. Scoop rounded tablespoons of the dough onto the cookie sheet. You can also use a small cookie scoop and scoop spoonfuls of the dough onto the pan.
Now it is time to flatten the cookies a bit. The cookies on the baking pan will be sticky, so spray the bottom of a glass with cooking spray and use it to press the dough down in the pan.
Bake for 15-18 minutes in a 350-degree oven. Cook time on ovens varies so keep an eye on them at the 15-minute mark.
When the cookies come out of the oven, leave them on the cookie sheet for 5 minutes so they can firm up a bit. Then transfer the cookies to a cooling rack.
This 4 ingredient pumpkin cookies recipe gets its delicious flavor from pumpkin spice cake mix.
