    Tater Tot Casserole Breakfast

    My favorite thing about this breakfast casserole with tater tots is that you can prepare it the night before, place it in the refrigerator, and bake it up in the morning. Breakfast really doesn't get much easier than that. This is classic comfort food that is perfect for a chilly morning.

    This tater tot with casserole recipe is perfect for serving to a crowd for a special occasion, like Thanksgiving or Christmas. But it is also simple enough to make that you can serve it anytime.

    Crispy, golden tater tots go with pretty much anything, which makes them a total lifesaver for busy families. You can toss them into a breakfast casserole or turn them into a comforting dinner favorite like tater tot casserole with ground beef and gooey melted cheese. We love these tater tot recipes:

    How To Make Tater Tot Casserole Recipe

    To make this tater tot hotdish, start by browning your sausage over medium heat in a large skillet or in the microwave. Cut and spread the sausage into a greased casserole pan.

    Next, mix the milk, eggs, salt and pepper in a large bowl and pour them over the sausage in the baking dish.

    Now it is time to sprinkle on the cheddar cheese. If you will be serving this the next morning like I did, cover and refrigerate at this point. You will be performing the next steps in the morning.

    Spread the tater tots on top of the cheese layer.

    This tater tot casserole did not last long when I served it. I was lucky to snatch up a piece and it was SO good. The flavor can't be beat!

    Tips For Sausage Tater Tot Casserole

    Tip 1: Use a mix of cheddar and jack cheese for a rich, cheesy flavor. Layer some cheese before adding the tater tots and more on top for a gooey finish.

    Tip 2: No need to thaw the tater tots before using them. Just spread them evenly over the cheese layer.

    This overnight Tater Tot Casserole simple to make. Prepare it the night before and just pop it in the oven in the morning. Delicious, warm and CHEESY!

    Ingredients
      

    • 6 eggs
    • 20 oz sausage links use two 10 oz packages
    • 1 cup milk
    • 16 oz Tater tots
    • 2 ½ cups shredded cheese we used a cheddar and jack mix
    • ½ teaspoon salt
    • ½ teaspoon pepper

    Instructions
     

    • Preheat oven to 350 degrees.
    • Grease a 9 x 13 casserole dish.
    • Brown sausage according to package directions and cut into bit sized pieces. Spread cooked and cut sausage onto greased casserole dish.
    • In a large bowl, beat together milk, eggs, salt and pepper.
    • Cover the sausage in the casserole dish with the egg mixture.
    • Cover with one cup of cheese.
    • If you will be serving this the next morning, cover and refrigerate at this point.
    • In the morning:
    • Spread 16 oz of tater tots on top of the cheese.
    • Add the remainder of the cheese on top.
    • Bake for 40 minutes at 350 degrees.

    Notes

    • Mix cheddar and jack cheese for a rich, cheesy flavor.
    • Don't bother thawing the tater tots first. Just spread them evenly over the cheese layer.
    • Throw in some veggies like onions or mushrooms to bulk up the casserole and boost the flavor.

      There's just two of us at our house, so this is a great breakfast casserole to last for the week. Individual servings froze well and that was so helpful for having a quick breakfast on busy mornings.

      Very yummy and simple. I added a pinch of sea salt and about 1 teaspoon of black pepper and made my biscuits from scratch. Will consider serving again for potluck one Sunday morning at church.

        Donna, this is not usually something I eat while watching calories as it is a bit indulgent. If you check out the calories for each of the ingredients you can roughly calculate something for the entire dish.

      I'm planning on making this for dinner tomorrow night. I usually half recipes since there is just 2 of us, but 3 eggs doesn't seem like enough for the two of us. Is it pretty thin?
