Once the chicken has been cooked with the salsa, simply shred it in the crock pot. Then it is simply a matter of layering the other ingredients in some small tortilla chip cups. I added shredded chicken, salsa, guacamole and cheese to these chicken taco cups, but you can vary the ingredients based on your preferences. I love the idea of setting up a bar where guests get to create their own taco cups. Simply set out the shredded chicken and different bowls of ingredients and party guests can customize their own taco cups.
Some different ingredients you can include:
- salsa
- guacamole
- shredded cheddar cheese
- sliced olives
- sour cream
- chopped onions
- chopped tomatoes
- corn
- ranch dressing

Chicken Taco Cups - Party Appetizer

Ingredients
- 3 fresh or defrosted chicken breasts
- ¾ cup of salsa
- 1 bag of small tortilla chip bowls
- for toppings:
- ¾ cup salsa
- 1 cup guacamole
- ¾ cup shredded cheddar cheese
Instructions
- Defrost chicken breasts and place in slow cooker.
- Add salsa on top of the chicken.
- Cook for 4 hours on high or 8 hours on low. When there are 30 minutes left in the cooking time, open the pot and shred the chicken with two forks. Mix the ingredients together.
- Set out small tortilla chip bowls and fill each with a spoonful of chicken mixture.
- Top with a small spoonful of salsa, guacamole and shredded cheese.
