Ingredients For Halloween Meringue Recipe
- Egg whites: The main ingredient for meringue, which gives it structure and stability when whipped.
- Sugar: You can use granulated sugar if that is all you have, but super fine sugar works better for meringues.
- A pinch of salt: Enhances the flavor and can help with the whipping of the egg whites.
- Cream of tartar: Used to prevent egg whites from collapsing; helps give the cookies a better volume and texture.
- Yellow and orange food coloring: Add vibrant colors to these candy corn cookies. I used powdered food coloring, but liquid or gel food coloring will also work.

How to Make Halloween Meringues
Separate the large egg whites from the yolks carefully, making sure no yolk gets into the whites. Place the egg whites in the mixing bowl of a stand mixer, add salt and cream of tartar, and beat on medium speed with whisk attachment until soft peaks form.
Add sugar a little at a time, and beat until the mixture has thickened and become somewhat shiny. Divide the mixture into three parts. Color one part orange, one part yellow, and leave the third part white.


Place each colored mixture into a separate pastry bag. Pipe the meringues onto a baking sheet lined with parchment paper in three layers. Orange is at the bottom, followed by yellow, and finished with white on top.


Bake at 210°F for an hour, until the meringues easily come off the parchment paper and feel dry.

Tip 1: Be patient when baking; slow and low heat is key to cooking the meringues.
Tip 2: Make sure all your tools and bowls are completely clean and dry. Any leftover residue or moisture can affect the results.
Tip 3:Use room-temperature egg whites for better volume.
Tip 4: If you have any leftover meringue in the piping bags, you can pipe it onto parchment in smaller shapes for mini cookies.

Halloween Meringue Recipe
Ingredients
- 2 egg whites
- ½ cup sugar fine sugar is preferred
- a pinch of salt
- ¼ teaspoon cream of tartar
- ½ teaspoon yellow food coloring
- ½ teaspoon orange food coloring
Instructions
- Preheat oven to 210 degrees F.
- Start by carefully separating the egg whites from the yolks, making sure each yolk stays intact and doesn’t touch the whites. Pour the egg whites into a mixing bowl, add a pinch of salt and ¼ teaspoon of cream of tartar, then whip it all up with a mixer until stiff peaks form.
- Slowly mix in a quarter of the fine sugar while you keep beating for about 1 to 2 minutes. Then, add the rest of the sugar a little at a time, continuing to beat until the meringue becomes thick, stable, and airy enough to hold its shape.
- Take half of the meringue and mix in orange food coloring until it’s evenly spread. Pop this mixture into a piping bag for later.
- On a baking sheet lined with parchment paper, pipe the orange meringue into your preferred shapes, making sure to leave enough space between them.
- Set aside one-third of the remaining meringue mixture and color the rest yellow. Place the yellow meringue in another piping bag.
- Pipe yellow towers on top of the orange. Fill another piping bag with the white meringue and pipe the white meringue on top of the yellow.
- Bake the meringues in an 210°F oven for an hour. They’re done when they easily lift off the parchment and feel dry to the touch.
