One of my favorite things about fall are all the Easy Apple Recipes you see this time of year. Today I am sharing one of my favorite yummy apple cookie recipes with you. These Apple Cookies stay soft and chewy and are full of apple flavor. The apples and oatmeal make them hearty and filling and give them a great texture. These apple oatmeal cookies are the perfect complement to a hot cup of tea or coffee. The fall spices in these cookies make the house smell wonderful while baking.

- butter - gives richness and structure to the cookies
- white sugar - adds sweetness
- brown sugar - pairs well with the nutmeg and cinnamon
- eggs - adds leavening and flavor
- vanilla - quality vanilla helps to enhance all the other flavors in the cookie
- all-purpose flour - pastry flour also works well in cookies
- baking powder - I use baking powder over baking soda when I have a recipe that requires me to cream the butter and sugar
- salt - I used table salt, but sea salt and kosher salt also work well in baking
- ground nutmeg - give the cookies a nutty, sweet flavor
- ground cinnamon - complements apples perfectly
- rolled oats - better for cookies than quick oats
- apples - Fuji adds sweetness and Granny Smith adds a more tart flavor. Which you use is a matter of preference.
- almonds or pecans - your choice. Each adds a nutty flavor and crunch
📋 Step by Step Instructions
STEP 1: Peel apples and dice them into small pieces.
STEP 2: Preheat oven to 350 degrees. Cream the butter with the white and brown sugars in a large bowl or stand mixer. Beat in eggs and vanilla extract until thoroughly blended.
STEP 3: In a medium bowl, combine all-purpose flour, baking powder, salt, nutmeg, and cinnamon.
STEP 4: Stir the flour mixture into the wet ingredients until blended.
STEP 5: Add oats, apples, and almonds.
STEP 6: Drop cookie dough by rounded tablespoonfuls 2 inches apart onto a baking sheet lined with parchment paper. You can use a cookie scoop for this step.
STEP 7: Bake for 12 to 15 minutes at 350 degrees. Remove from oven and cool on a wire rack.
