These Gluten Free Chocolate Chip Cookies are a family favorite. Made with almond meal, they have a soft center, slightly crunchy edges, and a rich nutty flavor, made all the better by gooey chocolate chips. Whether you're gluten-free or not, this is one of those cookie recipes you will make again and again.

These cookies are so good that we served them to some non-gluten-free folks, and they thought they were great and were shocked when we told them it was a gluten-free recipe.

How To Make Almond Meal Chocolate Chip Cookies
1. Preheat your oven: Set it to 375°F and line a baking sheet with parchment paper while it warms up.
2. Cream butter and sugar: Do this until the butter and sugar are smooth and creamy. This step is key for a great cookie!
3. Add eggs and vanilla: Mix until well combined.
4. Combine dry ingredients: In a separate bowl, mix almond meal, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

5. Fold in chocolate chips: Stir in the chocolate chips. Make sure to add plenty - every bite deserves some chocolate!

6. Scoop and shape cookies: I like to use a cookie scoop since it helps all my cookies to be the same size. Press them down slightly for those golden, crispy edges.

7. Bake: Place the cookies in the oven and bake for 12–15 minutes. You’ll know they’re ready when the edges turn golden and your kitchen smells amazing!
8. Cool and enjoy: You'll want to eat these right away, but trust me, let them cook for a few minutes.

Tips for Making Gluten Free Cookies
Tip 1: Room temperature butter helps it cream smoothly with the sugar, ensuring soft cookies.
Tip 2: If your dough is too sticky, chill it in the fridge for 10-15 minutes before scooping.
Tip 3: Don’t overbake. Gluten-free cookies can dry out quickly, so keep an eye on them!
