📋Step by Step Instructions
STEP 1: Prepare a box of stuffing according to the package directions. Prepare mashed potatoes.

STEP 2: Preheat oven to 350 degrees. Grease a 13x9 casserole dish. I love this set from Pyrex. Grease the casserole dish using butter or margarine spread around the pan with your fingers.

STEP 3: Add the mashed potatoes to the casserole dish and spread them out to form an even layer.

STEP 4: Spread ⅓ cup of gravy over the mashed potatoes.

STEP 5: Add the chopped turkey to the casserole along with salt and pepper. Spoon another ⅓ cup of gravy over the turkey.

STEP 6: Add the stuffing on top of the turkey layer and press it down to make an even layer.

STEP 7: Top with the last ⅓ cup of gravy and ½ cup of dried cranberries. Bake for 30 minutes at 350 degrees.

I'm definitely going to make this with the Thanksgiving leftovers and try freezing it. I think this is something we could enjoy year-round.

I make a similar version of this every year with leftovers that I call Thanksgiving Shepard's Pie. I start with a layer of dressing, next is left over turkey topped with gravy, then leftover veggies and lastly, mashed potatoes. After it's heated through, I add some shredded sharp cheddar to the top and put back in oven until cheese melts. It's almost better than Thanksgiving dinner!

Thanks Vicky. It was delicious. I used already-made tubs of mashed potatoes from the store to make things easier. I sauteed onion and celery to add into the stuffing that I made in the microwave. I cooked a split turkey breast in crockpot the day beforehand to use in this recipe. I made a large dish and then made a smaller dish minus the turkey for my daughter. We had corn, green beans, sweet potatoes and rolls with this, and pie for dessert. The meal was very filling and the whole family loved it.

I would probably let the blueberries thaw some so you weren't getting a lot of extra water in the recipe. The recipes is a basic muffin recipe so I think it would also be good with chocolate chips as well. I have never tried that though but it sounds yummy.
