    Baked Brie and Jam Cups

    I have a confession to make. I do not like entertaining. Don't get me wrong, I love seeing friends and getting together, but I just prefer to do it at their place. I stress out to much when I have people over. The house has to be perfect, the kids need to behave and I spend hours in the kitchen preparing food. Can you relate? I realize that these stresses are of my own creation. My husband is happy to have people over to a messy house and let them make their own sandwiches. I am working on going with flow more when it comes to hosting. I mean, it is the company and memories that matter, not all the other stuff. I am about to share a secret for taking the stress out preparing food for guests. Are you ready for it? I cheat a bit when it comes to food prep. No, I don't buy something already made and try to pass it off as my own. But I have come up with some easy, crowd pleasing recipes that take minutes to prepare. That's right, I said minutes. I am sharing one of my favorites with you today for Baked Brie and Jam Cups. 

    These Baked Brie and Jam Cups take just minutes to make and will wow your guests!

    All you need to make these Baked Brie and Jam cups are four ingredients: phyllo cups, Brie, jam or preserves and almonds.

    This appetizer recipe could not be easier. It takes just minutes to cut up some brie cubes and add them to some pre-made mini phyllo cups. You can usually find the cups in the freezer section next to the puff pastry.

    Then scoop on a generous helping of jam.

    Lastly, add some chopped almonds for a bit of crunch and bake.

    I even made mine in the toaster oven! When they come out of the oven minutes later, the cups are crunchy, the brie is gooey and the jam is deliciously warm. It's a party for your mouth.

    I do have a warning about this recipe. Make more than you think you will need. Each person at my place was consuming between 5-6 of these. So you now you now my secret for taking some stress out of entertaining. I am still working on not caring about our cluttered house, and getting the kids to behave, but for now at least I have the food portion taken care of.

    Ingredients

    • 15 Pre-made phyllo cups they come 15 per package
    • 8 oz Wedge of Brie cheese
    • ½ cup Jam or preserves favorite flavor
    • ½ cup chopped/sliced almonds

    Instructions

    • Preheat oven to 350 degrees.
    • Cut Brie into small cubes. Remove the rind if desired.
    • Place one Brie cube into each phyllo cup.
    • Top each cup with ½ tablespoon of fruit spread.
    • Sprinkle chopped almonds on top of fruit spread.
    • Bake for 10 minutes at 350 degrees.
