- Chicken broth - You can use homemade or canned. Low-sodium chicken broth is fine if you are watching your salt intake.
- Hidden Valley Ranch seasoning packet - This is the kind you would use to make salad dressing. You can also make your own ranch seasoning with this recipe from Mad Creations.
- Boneless skinless chicken breasts - Defrosted. I get 100% grass-fed beef and free-range organic chicken from Butcher Box. They have amazing prices. You can also use skinless chicken thighs.
- Cream Cheese - Be sure to use full-fat cream cheese and it makes the chicken creamier. Cut the cream cheese into chunks.
- Bacon - Make sure the bacon is cooked and crumbled before adding it to the keto crack chicken in the crock pot.
- Shredded cheddar cheese - If you are on a low-carb diet, it is better to grate your own cheese. You can use medium of sharp cheddar cheese.
How to Make Keto Crack Chicken Crock Pot
To make this keto chicken recipe, start by adding chicken broth to your slow cooker. Stir in a packet of Hidden Valley Ranch dressing mix until it has fully dissolved into the broth. Next, add the defrosted chicken breasts to the crock pot.
Cover the crockpot with the lid to keep the heat and moisture inside. Let the chicken cook for 4 hours on high heat for a quicker meal or 8 hours on low heat for a more slow-cooked, flavorful result. Do not open the lid while the chicken is cooking.
After the cooking time has ended, shred the chicken with two forks or use these shredding claws. They are so much easier on the hands and make the shredding job much quicker. When you shred the chicken, it will absorb any leftover liquid.
Now it is time to add the cream cheese. Cut the block of cream cheese into chunks and add them to the shredded chicken in the pot. Crumble the bacon and add it and the shredded cheddar cheese to the crock as well. Stir all of the ingredients together to incorporate everything.
Place the cover back on the crock pot and cook the chicken in there for an additional 5-10 minutes until the cream cheese has fully melted.
You can sprinkle some more bacon on top of the crock pot crack chicken, since more bacon makes everything better!

Keto Crack Chicken in the Crock Pot

- ½ cup chicken broth
- 1 Hidden Valley Ranch seasoning packet
- 2 pounds of defrosted chicken breasts
- 8 oz package of Philadelphia Cream Cheese cut into chunks
- 8 slices cooked and crumbled bacon

What makes this not so keto is the ranch packet. MSG or modified food starch causes increased insulin release, opposite of keto.

I made this tonight, and it was delicious! And so easy! I planned to use my crockpot, but got home much later than planned and didn't have time to let it cook for 4 hours. So I used my pressure cooker instead! 15 minutes and I had perfect chicken! Then I switched it to the slow cooker setting to add everything else in. I served this over cauliflower rice with a side of steamed broccoli, and it was a hit! I will be making this again!

No. Just no. Seriously trying to figure out how to salvage this mush. I followed the recipe to the T. Way too much broth. Way over cooked (and I stopped the slow cooker an hour early). This is just a salty (and I used unsalted broth) paradoxically bland mess of goo.
I could have used these beautiful chicken breasts for schnitzel and I destroyed them. Not happy.

Maybe you were expecting something else? It IS shredded chicken. You could easily use less broth or remove some before mixing in the other ingredients. I made it tonight, and my daughter found it difficult to stop eating - it was so good!

My guess would be 5-6ounces per serving. You have 2 lbs of chicken = 32 ounces. Then add 8 oz of cream cheese and 1/2 cup of shredded cheese is another 2 ounces. So 42 ounces so far without the liquid. 1/2 c of broth is another 4 ounces. So 46 ounces total. Divide 46 ounces by 8 servings would be somewhere between 5 and 6. Not sure if there is any shrinkage of weight due to cooking of the meat or broth. I’m just now cooking this for the first time.
